Using a mixer, cream together the melted browned butter, brown sugar, and granulated sugar. Add egg, egg yolk, and vanilla extract. Beat for 1 minute on medium speed.
Add the dry to the wet ingredients and beat just until combined. Fold in the chocolate chips, peanut butter chips, and toffee bits into the mixture.
Scoop the dough into 1/2 cup portions. Place on a greased baking sheet, leave enough room between each cookie. Lightly flatten the cookie with your hand. Bake at 350°F for 10-12 minutes. Immediately sprinkle with sea salt.
