These strawberry cheesecake chimichangas are outrageously good. As we approach strawberry season, you’re going to want to save this recipe to make over and over! It’s great for Cinco de Mayo too!
In a large bowl, add cream cheese, sour cream, and sugar. Mix until combined. Add the chopped berries and fold together.
Lay down a tortilla, scoop the strawberry cream cheese mixture into the middle. Fold in the sides and roll it into a burrito.
Place the strawberry cheesecake burritos in air fryer. Cook the chimichangas for 10-12 minutes at 350 degrees.
Remove them from the air fryer and brush them with melted butter.
Combined the sugar and cinnamon in a shallow plate. Roll the chimichangas in cinnamon sugar.
