Combine all the ingredients (except chicken) in a large bowl, whisking until smooth. Remove the backbone from the chicken, and flatten it down.
Use a sharp knife to make deep slits in the chicken. Place the chicken in a large dish or sealable bag, and pour the marinade on top. Evenly coat chicken. Marinate in the refrigerator overnight
Preheat oven to 400F (200C). Heat a skillet over high heat. Place the chicken skin-side down and cook for a few minutes then flip over and sear the other side. Transfer the chicken to a baking dish and cover with foil. Bake for 50-60 minutes.
