Add spinach and shallots to a large skillet and cook until the spinach has wilted. Placing the spinach mixture in a large mixing bowl with cream cheese, salt, pepper, paprika, and crumbled feta cheese. Mix well.
Place a dinner roll on a lightly floured surface and press down to flatten. Then, place a small amount of the spinach mixture on the roll and top with mozzarella. Fold the dough over and sealing the edge.
Use a pastry brush to apply egg wash to the tops. Place in the oven at 350F (175C) and bake for about 25 minutes.
Once baked, remove the fatayer from the oven and let them cool slightly before serving.
