Add the zucchini, potatoes, carrots, red onion, garlic cloves, diced tomatoes, and paprika to a large baking dish. Drizzle with oil and sprinkle with salt and pepper, then mix well.
Add the meatballs to the baking dish. Cover dish with aluminum foil and bake in oven at 375F (190C) for 1 hour and 10 mins.
