Warm the oil in a skillet over medium-high heat. Sauté the garlic, onions, and chicken until the meat is no longer pink. Then, add in the peppers, taco/fajita seasoning, salt, and black pepper. Cook until the peppers are soft.
Place slices of bread in the bottom of the prepared baking dish, and layer the chicken fajita mixture on top followed by half of the cheese. Place the remaining bread on top.
Whisk together the milk and eggs, and pour the mixture on top. Top the dish with the remaining cheese.
Bake for 20 minutes. Then, set the oven to broil, and continue to cook until the cheese is bubbly and golden.
