Ingredients You Need

  • Rolled Oats – These little nutritional powerhouses are the base of the bars and soak up all the goodness of the other ingredients.
  • Baking Powder – This magical ingredient helps your bars rise, giving them the perfect texture.
  • Sea Salt – Just a pinch of sea salt brings out all the sweet and nutty flavors.

How to Make Peanut Butter Banana Baked Oatmeal Bars

  1. Mix Together Wet Ingredients. Fold together the mashed bananas and peanut butter in a large bowl before adding the vanilla, syrup, and egg. Once combined, pour in the milk and stir together. 
  2. Combine the Dry and Wet Ingredients. Pour the oats, baking powder, sea salt, and cinnamon into the banana and peanut butter mixture and mix together until completely combined. 
  3. Bake the Bars. Transfer the oat mixture to the prepared baking dish that has been greased. Sprinkle chocolate chips on top and place in the oven to bake for the recommended time. 
  4. Top and Serve. After removing the pan from the oven, top with more peanut butter if desired. Allow the bars to cool briefly, then slice. Serve immediately or allow the bars to reach room temperature before storing. The bars can be served cold as well.

Can I Store Leftovers? 

You can definitely store leftover peanut butter banana baked oatmeal bars, but if your house is anything like ours, they probably won’t stick around long! You can keep them on the counter for up to 3 days in an airtight container or keep them longer by popping them in the fridge or freezer.

Place these bars in the fridge for up to 1 week after placing them in a resealable bag or airtight container. If you choose to stack them, be sure to place parchment paper between the layers. 

Freeze the bars for up to 3 months in freezer bags or a freezer-safe container.

These peanut butter banana baked oatmeal bars are soft, chewy, and studded with sweet chocolate chips in every bite!

Ingredients  

  • 3 small overripe bananas mashed
  • ¼ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ¼ cup pure maple syrup
  • 1 large egg lightly beaten
  • ¾ cup whole milk
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg

Topping:

  • ¼ cup Chocolate chips
  • ¼ cup creamy peanut butter

Instructions 

Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan and set aside.

Combine Wet Ingredients:

  • In a large bowl, combine the mashed bananas and peanut butter. Stir in the vanilla extract, maple syrup, and egg. Add the milk and mix well.
    3 small overripe bananas, ¼ cup creamy peanut butter, 1 teaspoon vanilla extract, ¼ cup pure maple syrup, 1 large egg, ¾ cup whole milk

Add Dry Ingredients:

  • Add the rolled oats, baking powder, sea salt, ground cinnamon, and nutmeg to the wet ingredients. Stir until the batter is uniform throughout.
    2 cups rolled oats, 1 teaspoon baking powder, ½ teaspoon sea salt, 1 teaspoon ground cinnamon, ½ teaspoon nutmeg

Bake:

  • Pour the mixture into the prepared baking dish. Top with chocoale chips Bake for 25 minutes, or until the top slightly springs back when touched and the edges are just barely brown.
    ¼ cup Chocolate chips

Drizzle and Serve:

  • If desired, drizzle the top with additional peanut butter. Let cool slightly before cutting into squares. Serve warm or cold. Store in the refrigerator and reheat in the microwave if desired.
    ¼ cup creamy peanut butter
