We are big fans of brioche french toast bakes and have been making them forever! French toast typically takes a long time to make. Between individually dipping each slice and pan-frying it on each side, you are spending so much time in the kitchen!
If you have ever wondered if there is an easier way to make breakfast, then baking French toast is perfect for you. It is such a great shortcut that eliminates time without sacrificing flavor. Plus, baked French toast is also very shareable!
What kind of bread to use (and how to make this gluten-free French toast!)
The title of this recipe says it all when it comes to the bread type! We love to use brioche bread for French toast because it is so fluffy. The egg wash mixture absorbs so well into the bubbles of the bread! Challah has a similar texture and can work interchangeably with brioche.
If you are living a gluten-free lifestyle or are baking for someone with a gluten allergy or gluten intolerance, you can absolutely still make this recipe! Just use your favorite gluten-free bread and everything else is the same. Just make sure you check that your powdered sugar is gluten-free friendly! Some sugar companies process flour in the same factory, which can cause problems for severe gluten allergies.
Regardless of what type of bread you use, we recommend letting it get stale. Dry bread will absorb more of the liquid, making for the absolute best French toast!
How to make berry brioche French toast bake
- Chop up your brioche loaf into chunks and set aside. Separately, chop the cream cheese into cubes.
- Make your egg wash mixture. Combine the milk, eggs, vanilla, cinnamon, and sugar in a large bowl. Whisk it all together until the mixture is combined.
- Arrange the brioche cubes in an oven-safe baking dish. Top with strawberries and blueberries. Place the cream cheese cubes around the top.
- Pour the egg wash over the entire dish. Bake for about 35 minutes.
- Serve with powdered sugar and maple syrup
How to store this French toast bake
Storing our berry brioche French toast is super easy! You can keep it in an airtight container in the fridge for about 3 days. If you are going to eat it within 24 hours of baking, you can just cover the top of the baking dish and pop it in the fridge!

Berry Brioche Cream Cheese French Toast Bake
Ingredients
- 1 loaf brioche bread
- 8 ounces cream cheese
- 3 cups whole milk
- 4 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 3/4 cup granulated sugar
- 16 ounces strawberries
- 8 ounces blueberries
Instructions
- Preheat oven to 350 degrees Fahrenheit.
