This cheese phyllo recipe is inspired by our spanakopita phyllo recipe and might be even easier to make. All you have to do is scrunch up the phyllo, add the cheesy topping, and bake! 

It comes out crisp and golden with lots of melty, satisfying cheese. Who can say no to that? 

Enjoy it on its own, or pair it with your favorite main course. You can easily double or triple the recipe to feed a crowd, too!

  • Phyllo Dough – These form the base of the recipe, creating a sort of crust, and can easily be found in the refrigerated section of most grocery stores. 
  • Butter – Use unsalted butter to create a golden, crisp exterior and add rich flavor to the dish. 
  • Milk – We use full-fat milk for the best taste, but any milk or dairy-free milk will work. 
  • Egg – This enhances the rich flavor and helps create a crisp crust. 
  • Granulated Sugar – Just a pinch helps balance out the tanginess of the cheese. 
  • Black Sesame Seeds – Technically optional, these add a bit of crunch and a slightly nutty taste. 
  • Cheese – This recipe is called feta cheese phyllo, but we use two types of cheese (feta and mozzarella) for tons of salty, savory, gooey goodness!

How to Make the Best Feta Cheese Phyllo 

Before you begin, preheat your oven, and butter a large baking pan. 

  1. Prepare the phyllo. Place a sheet of phyllo on a clean work surface. Scrunch the phyllo together across the wide side. It will resemble a pleated surface. 
  2. Bake. Carefully lift the scrunched-up phyllo dough, and place it along the short side of the baking pan. Transfer the pan to the oven, and bake. 
  3. Bake again. Drizzle the phyllo with melted butter. Then, return it to the oven. 
  4. Prepare the topping. Whisk the milk, egg, sugar, feta, mozzarella, salt, and pepper in a bowl. 
  5. Top the phyllo. Pour the milk mixture over the baked phyllo, and sprinkle the sesame seeds on top. 
  6. Bake. Transfer the dish back to the oven, and continue to bake until the phyllo browns. 
  7. Serve. Allow the cheese phyllo to cool slightly. Then, cut it into pieces, and enjoy!

Prepare this crinkle feta cheese phyllo recipe with eight ingredients and just a few minutes of prep time for a rich appetizer or side dish!

Ingredients  

  • 1 package phyllo dough
  • 1/2 cup butter, melted
  • 1 cup milk
  • 1 egg
  • 1 Tablespoon sugar
  • 1/4 cup feta cheese
  • 1/4 cup mozzarella cheese
  • 2 Tablespoons black sesame seeds

Instructions 

  • Preheat the oven to 350 degrees Fahrenheit. Butter a large baking pan.
  • Place a sheet of phyllo dough on a clean work surface near the baking pan. Scrunch the phyllo together across the wide side so that it bunches up and resembles a pleated surface.

  • Carefully lift the scrunched phyllo dough and place it along the short side of the baking pan.
  • Bake the phyllo dough for 10 minutes.
  • After 10 minutes, remove the baking pan from the oven, and drizzle melted butter over the baked phyllo dough. Return to the oven and bake for an additional 10 minutes.
    1/2 cup butter, melted
  • In a bowl, whisk together the remaining ingredients except the sesame seeds.
    1 cup milk, 1 egg, 1 Tablespoon sugar, 1/4 cup feta cheese, 1/4 cup mozzarella cheese
  • Pour the mixture over the baked phyllo dough in the baking pan.
  • Sprinkle black sesame seeds over the top.

  • Bake until golden brown, about 45 to 50 minutes.
  • Remove from the oven, cool slightly, and cut into pieces. The pie will have a pleated appearance.
