Make these cheesy broccoli fritters in less than 30 minutes for a flavor-filled, nutrient rich side dish, appetizer, or snack!

Ingredients  

  • 4 cups broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs beaten
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • Pinch of black pepper

Instructions 

  • Steam the broccoli florets for about 4-5 minutes until they are tender but still crisp. Drain any excess water and chop the steamed broccoli into small pieces.

  • In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, shredded mozzarella cheese, all-purpose flour, beaten eggs, dried oregano, paprika, salt, and black pepper. Mix until all ingredients are well combined.
