We love a solid night out in the backyard grilling. The flavors, sounds, and smells all make for the best night! You can totally throw these chicken skewers on the grill if that’s your preferred method of cooking.
Personally, we love to bring the nostalgia and flavors of grilling inside! It makes it much easier to cook (and clean) when you make chicken skewers in your oven.
The magic marinade for our oven-baked chicken skewers
We hinted at this at the beginning of this recipe, but we have a secret weapon that makes this recipe even simpler than our usual ones! Instead of making our marinade from scratch, we use Bitchin Sauce for our marinade. It saves a ton of time, AND it’s delish!
Bitchin Sauce is a nut-based sauce, first created in San Diego by a husband and wife team. Not only are these sauces vegan, but they are gluten-free and allergen friendly as well! Bitchin Sauce is packed with protein, too, making it super healthy for you!
We use the Chipotle variety in this recipe, and absolutely love the little kick of heat it adds to the dish. This zesty sauce paired with the chicken and grilled veggies is an unbeatable combination that’s sure to knock your socks off.
How to make oven-baked chipotle chicken skewers
- Cut chicken breasts into chunks and place them in a large bowl.
- Add a squeeze of lemon, Bitchin sauce, salt and pepper to the bowl.
- Mix everything together using a spatula or your hands.
- Note: If you have time, marinate this overnight or at least 1 hour.
- Chop up your red onions and peppers into chunks.
- Build your skewers, alternating chicken with veggies.
- Cook in the oven at 375 degrees for 25-30 minutes (or on a grill), until the vegetables are slightly charred and the chicken is thoroughly cooked.
- Serve and enjoy!
How to store oven-baked chipotle chicken skewers
This recipe is as easy to store as it is to make! Use a fork to pull the chicken and veggies off the skewers and place them in an airtight container. In the fridge, this will last for 3-5 days!

Ingredients
- 2 pounds boneless skinless chicken breasts
- 1/2 lemon fresh lemon
- 1/3 cup Bitchin' Kitchen Sauce
- 1/2 teaspoon sea salt
- Black pepper to taste
- 1 medium red onion
- 1 medium yellow bell pepper
- 1 medium green bell pepper
- 1 medium orange bell pepper
