Chocolate chip cookie dough bark is the ultimate sweet treat mash-up! When we saw it online we knew we had to make our own version. We start with a rich cookie dough layer that’s filled with chocolate chips and then top it with a thin layer of chocolate. While many videos show a sprinkle of salt on top, our chocolate layer is studded with crunchy M&Ms! 

In addition to it being an absolutely incredible dessert, what we think makes chocolate chip cookie dough bark so amazing is how simple it is to whip up. Each layer takes mere minutes to make — the hardest part is waiting for it all to set! Once it has, you just break it into pieces, and voila — dessert is ready! Whether you’re hosting a party, looking for a fun gift idea, or just craving something sweet, this bark is sure to become your new go-to treat.

Ingredients You Need

Cookie Dough:

  • Almond Flour – This gluten-free flour gives the cookie dough a nutty flavor and a soft, chewy texture. It’s the perfect base for our delicious treat!
  • Melted Coconut Oil – This oil adds richness and keeps the dough nice and moist.
  • Maple Syrup – We love the caramel-like sweetness that maple syrup gives the dough.
  • Vanilla Extract – Vanilla gives the dough that classic, comforting cookie taste.
  • Chocolate Chips (divided) – Because what’s cookie dough without chocolate chips? They add delightful pockets of goodness throughout the dough.

Chocolate Top:

  • Coconut Oil – Used in the chocolate top, it helps create a smooth, glossy finish and adds a hint of coconut flavor.
  • Peanut Butter – This creamy delight pairs perfectly with chocolate, adding depth and a rich, nutty flavor to the topping.
  • M&Ms – These add a satisfying crunch and plenty of fun color!
  1. Make the Dough. Add the almond flour, melted coconut oil, maple syrup, and vanilla extract to a large bowl and stir until smooth. Then, add the chocolate chips and stir again until they are evenly dispersed. 
  2. Create the Bark. With a rubber spatula, spread the dough evenly onto a baking sheet lined with parchment paper before placing it in the freezer to set. 
  3. Make the Topping. Place the rest of the chocolate chips, coconut oil, and peanut butter in a microwave-safe container and heat in intervals, stirring after each until the mixture is silky smooth. Then fold in the M&Ms. 
  4. Top the Bark. Remove the cookie dough from the freezer and drizzle the chocolate mixture over top before using a rubber spatula to spread it so that it coats the cookie dough evenly. Place the baking sheet back in the freezer to allow the chocolate to set. 
  5. Cut and Serve. Take the baking sheet out of the freezer and use a sharp knife to slice the bark into pieces. Or, for a more rustic presentation, simply use your hands to break the bark into pieces instead. Then, serve immediately or store.

Variations

  • Flour – Experiment with swapping out the almond flour for oat flour for a different texture.
  • Syrup – Substitute honey or agave syrup for a different sweetness profile. Or, try date syrup for a more complex, caramel-like flavor.
  • Extract- Use almond extract for a nutty twist!
  • Chocolate Chips – Use dark chocolate chips for a richer, more intense flavor or substitute with white chocolate chips or butterscotch chips for a fun variation.
  • Nut Butter – Substitute with almond butter or cashew butter for a different nutty taste or try sunflower seed butter for a nut-free option.
  • Nuts – Replace the M&Ms with chopped almonds, pecans, or walnuts for a different crunch, or try shredded coconut or crushed pretzels for a totally unique twist!

Can I Store Leftovers? 

This bark tends to disappear quickly in our homes but if you have leftovers you can definitely store them! It will stay fresh if stored in a cool, dry place for up to 5 days but you can put it in the fridge or freezer, too. 

To refrigerate cookie dough bark, place it in a resealable plastic bag. Store in the fridge for up to one month. 

To freeze, you may want to separate the bark with parchment paper so that the pieces don’t stick together. Place them in a freezer bag and store them for up to 3 months. Just thaw on the countertop or in the refrigerator.

Ingredients  

  • 1 1/2 cups almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Chocolate Top:

  • 1 teaspoon coconut oil
  • 1/4 cup peanut butter
  • 1/2 cup M&Ms
  • 1/2 cup semi-sweet chocolate chips

Instructions 

Prepare the Dough:

  • In a large bowl, mix together almond flour, melted coconut oil, maple syrup, and vanilla extract until the mixture is smooth.

  • Fold in the chocolate chips.
    1/2 cup semi-sweet chocolate chips

Form the Bark:

  • Line a baking sheet with parchment paper.
  • Spread the cookie dough across the parchment paper, forming a flat, even layer. Use clean hands to press it down and shape it.

Chill the Bark:

  • Place the baking sheet in the freezer for about 5 to 10 minutes to allow the bark to set.

Prepare the Topping:

  • While the bark is chilling, melt chocolate chips, coconut oil and peanut butter and melt in microwave. Then add M&Ms. (Note: Heat in short bursts 20-30 seconds at a time) and stir until smooth and fully melted.
    1/4 cup peanut butter, 1 teaspoon coconut oil, 1/2 cup M&Ms

Add the Topping:

  • Pour the melted chocolate, peanut butter, and M&M mixture over the chilled bark, spreading it evenly across the surface.
  • Return the baking sheet to the freezer and let it chill for at least an hour.

Finish and Enjoy:

  • Remove the baking sheet from the freezer.
  • Cut the bark into pieces and enjoy your delicious treat!

    1. Hi Cindy! We haven’t tested it and can’t say for sure. It might not work as almond flour tends to absorb less liquid than all-purpose flour.
