Traditionally, feta with tomatoes is made by mashing feta cheese with some olive oil, and dried mint. You then mix in chopped tomatoes, and sometimes add cucumbers, or chopped green peppers. Serve with with warm pita bread and dig in. But our version is even easier!

How to make feta toast

  1. On a plate add feta cheese and sour cream.
  2. Place the dried mint in the palm of your hands and rub together to release the oils, sprinkle the mint on the feta and sour cream.
  3. Drizzle with 3 tsp olive oil. Mash with a fork.
  4. Slice tomatoes and cucumbers in really thin slices.
  5. Spread as little or as much feta mixture on toasted bread.
  6. Top with tomatoes and cucumbers. Garnish with more dried mint, olive oil, and sea salt.

Variations

We’re head over heels for this toast just the way it is, but if you’re feeling adventurous, here are a few ideas to switch things up:

  • If you like a little kick, add chopped and seeded jalapeño.
  • Serve as a dip with pita bread on the side or pita chips!

Ingredients  

  • 8 ounces feta cheese
  • 1/4 cup sour cream
  • 1 teaspoon dried mint
  • 3 teaspoons olive oil
  • tomatoes on the vine
  • cucumbers
  • sourdough bread or your favorite bread toasted
  • option to add jalapeños or crushed red peppers
  • olive oil dried mint, and sea salt for garnish
