You’re in for a treat with these easy s’mores brookie bars! These sweet treats have an irresistible brownie batter base generously layered with graham crackers, marshmallows, and oodles of chocolate. And to top it all off? A luscious blanket of chocolate chip cookie dough! It’s the ultimate indulgence that’ll satisfy any sweet tooth!

Ingredients for S’mores Brookies

  • Brownie mix, made according to package instructions
  • Refrigerated cookie dough
  • graham crackers
  • jumbo marshmallows
  • chocolate chips
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 cup melted unsalted butter
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 egg + 1 egg yolk (at room temperature)
  • 2 cups semisweet chocolate chips

In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Beat the vanilla, and eggs until light and creamy. Mix dry ingredients until stir just until blended. Stir in the chocolate chips.

How to make s’mores brookies (shortcut method)

  1. Preheat the oven to 350 degrees F.
  2. Make the brownie batter according to the package instructions.
  3. In a buttered 13×9 baking dish add prepared brownie mix. Arrange graham crackers over the brownie batter. Add the marshmallows.
  4. Top with the cookie dough, you want to try to loosely spread it out to cover the marshmallows (do not pack it down). Bake for 35-40 minutes or until a toothpick comes out clean.  If the top starts to brown cover with foil. Let cool completely before cutting into bars.
