In our opinion, everyone needs a good dip recipe or two (at least!) in their recipe arsenal. Not only are they always tasty, but they’re also the perfect go-to option for every occasion. Whether you need a quick, healthy afternoon snack, something to munch on for game day, or are looking for a crowd-pleasing option for a holiday feast, there’s a dip recipe for you! That said, we have quite a few dip recipes we love like our pizza dip with cheese crostini and baked queso dip. However, this feta roasted red pepper dip might be our tastiest recipe yet! It’s a bold claim, but one bite and we’re pretty sure you’ll agree. Not only is it super creamy thanks to a base of feta cheese, but it also has an element of sweetness and savoriness thanks to the inclusion of roasted red peppers. Topped with crispy chickpeas, it’s truly delicious. Even better, it’s ready in minutes so you can get out of the kitchen and back to snacking in no time!

Ingredients You’ll Need 

Bright in color and bold in flavor, you might be surprised to learn that this roasted red pepper dip comes together with just a handful of ingredients. Here’s everything you’ll need: 

For the Roasted Red Pepper Dip

  • Feta Cheese – For the creamiest texture and richest taste, we recommend using full-fat feta cheese. Crumbles work best for easy mixing, but you could also use blocks of feta and break them into pieces. 
  • Roasted Red Pepper – To save time, we opt for pre-made roasted red peppers from the store. Or, you could also make your own with a recipe like this
  • Lemon Juice – This helps cut through some of the heaviness of the fats for a lighter, well-rounded dip. 

For the Crispy Chickpeas

  • Chickpeas – For the best results, make sure to drain and rinse your chickpeas and lay them out to dry up to 24 hours in advance. If they’re still wet at all, they won’t crisp up in the air fryer
  • Olive Oil – Use high-quality olive oil to add a boost of flavor and healthy fats and help chickpeas crisp. 
  • Za’atar – Our favorite Middle Eastern spice! Feel free to mix and match your favorite seasonings to make this recipe your own. 

How to Make Easy Feta Roasted Red Pepper Dip

For this recipe, we’ve crafted a smooth red pepper dip and topped it with crispy chickpeas for extra flavor and a satisfying crunch. The best part? It all comes together in just a few minutes!

For the Roasted Red Pepper Dip

  1. Add all of the ingredients to a high-speed blender or food processor.  
  2. Pulse until smooth and creamy. 

For the Crispy Chickpeas

  1. Preheat the air fryer to 350 degrees Fahrenheit.
  2. Toss the chickpeas in the olive oil and seasonings, making sure they are evenly coated. 
  3. Air fry for 3-5 minutes or until they are golden and crisp, shaking halfway through cooking. 

To Assemble 

  1. Pour the roasted red pepper dip into a bowl. 
  2. Sprinkle the air fryer chickpeas on top.
  3. Enjoy

How Store

This roasted red pepper dip is great to prepare in advance for easy snacks in a pinch! If you do plan to have leftovers, we recommend leaving the chickpeas off and storing them separately in an airtight container at room temperature until just before serving. Otherwise, they’re likely to become soggy! 

To store, transfer the dip to an airtight container, and keep it in the fridge for up to 4 days. We don’t recommend freezing it — the cheese will not maintain its consistency when it thaws.

  • 2 cups crumbled feta cheese
  • ¼ cup roasted red peppers
  • Lemon juice to taste

For the Crispy Chickpeas:

  • 1 can chickpeas rinsed and drained, dried
  • 2 Tablespoons olive oil
  • 2 Tablespoons Za’atar

Instructions 

For the Roasted Red Pepper Dip:

  • Place all of the ingredients in the bowl of a high-speed blender or food processor.
    2 cups crumbled feta cheese, ¼ cup roasted red peppers, Lemon juice to taste
  • Pulse until smooth and creamy.

For the Crispy Chickpeas:

  • Preheat the air fryer to 350 degrees Fahrenheit.
  • Toss the chickpeas in olive oil and seasonings, coating evenly.
    1 can chickpeas, 2 Tablespoons olive oil, 2 Tablespoons Za’atar
  • Air fry 3-5 minutes or until golden and crisp, shaking halfway through.
  • Top the roasted red pepper dip with the chickpeas, and serve.
  • Store the roasted red pepper dip in an airtight container in the fridge for up to 4 days.
