- 3 medium bananas extra ripe
- 2 cups unsweetened almond milk or milk of choice
- 2 large eggs
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- 1/4 cup creamy peanut butter
- 3 cups rolled oats
- ½ cup unsweetened cocoa powder
- 1/2 teaspoon sea salt
- 1/3 cup semi-sweet mini chocolate chips
Preheat the oven to 350 degrees Fahrenheit. Grease a 7x11, or a 10-12 inch round baking dish and set aside.
Use a fork to mash the bananas in a large bowl. Add the milk, eggs, maple syrup, vanilla extract, and the peanut butter. Whisk to combine.

Add the oats, cocoa powder, and salt. Mix until smooth.

Pour the batter into the prepared baking dish.
Top with chocolate chips.
Bake 30-35 minutes or until the oatmeal is set.
