  • 3 medium bananas extra ripe
  • 2 cups unsweetened almond milk or milk of choice
  • 2 large eggs
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/4 cup creamy peanut butter
  • 3 cups rolled oats
  • ½ cup unsweetened cocoa powder
  • 1/2 teaspoon sea salt
  • 1/3 cup semi-sweet mini chocolate chips

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 7x11, or a 10-12 inch round baking dish and set aside.
  • Use a fork to mash the bananas in a large bowl. Add the milk, eggs, maple syrup, vanilla extract, and the peanut butter. Whisk to combine.

  • Add the oats, cocoa powder, and salt. Mix until smooth.

  • Pour the batter into the prepared baking dish.
  • Top with chocolate chips.
  • Bake 30-35 minutes or until the oatmeal is set.
  • Slice the oatmeal bake recipe into squares. Enjoy warm, or refrigerate.
  • Store in an airtight container in the fridge for up to 4 days.
