Smoked Salmon Cucumber Rolls with Avocado

  • 1 large English cucumber
  • 3 ounces smoked salmon
  • 1 avocado mashed
  • Salt to taste
  • Black pepper to taste
  • Black Sesame Seeds on top

Instructions

  • Thoroughly rinse the cucumber, and slice off both ends.

  • Using a vegetable peeler, slice the cucumber into long, thin strips. NOTE: When the seedy part is reached, turn the cucumber, and slice on the other side. There will be roughly 5-6 strips per side.

  • Slice the smoked salmon into bite-sized strips, and layer them on top of each other.

  • Use a paper towel or parchment paper to pat the cucumber strips dry, absorbing any excess moisture.

  • Spoon the mashed avocado over the cucumber near one end. Then, layer the salmon pieces on top.

  • Roll the cucumber strips over themselves, securing the roll tightly. Spear with a toothpick to hold the roll together, if desired.

  • Slice the cucumber roll into bite-sized pieces. Season the rolls with salt, pepper, and black sesame seeds to taste.
