- 1 feta block
- ¼ cup Greek yogurt
- ½ lemon juiced
- 3 Tablespoons olive oil
- ½ teaspoon dried mint
- ½ teaspoon dried basil
- ¼ cup water
- 3 large bell peppers halved, deseeded
- Salt to taste
- Pepper to taste
- ¼ cup toasted pine nuts
- 3 Tablespoons chopped parsley
Preheat the oven to 400° F.
Slice the peppers in half, and remove the seeds.
Place the peppers on a lined baking sheet, drizzle with olive oil, and add salt and pepper to taste.
Roast in the oven for 30-40 minutes or until soft.
While the peppers roast, add all of the ingredients for the whipped feta to a food processor or high-speed blender. Pulse until smooth.
Drizzle the whipped feta recipe over the peppers, top with pine nuts and parsley, and enjoy!
