This fruit salad is light and refreshing, it’s served over lettuce cups and topped with goat cheese, and pecans! Perfect spring salad!

Ingredients  

  • 16 ounces strawberries
  • 1 medium English cucumber
  • 1 large green apple or your favorite apple.
  • 1 medium mango
  • juice of 1/2 an orange
  • juice of 1/2 a lemon
  • 2 Tablespoons honey
  • lettuce cups goat cheese, and toasted walnuts or pecans for garnish

Instructions 

  • Dice strawberries.
