Ingredients  

  • 1/2 cup cottage cheese
  • 1 roma tomato chopped
  • 1/3 cup persian cucumbers
  • 1/4 cup kalamata olives
  • 1 teaspoon Greek seasoning or Trader Joe's green goddess seasoning
  • 2 hard-boiled eggs
  • 2 Tablespoons hummus

Instructions 

  • In a meal prep container, add cottage cheese, chopped tomatoes, cucumbers, olives. On the other side add cooled hard boiled eggs, and hummus in a separate small container. Sprinkle the seasoning over the cottage cheese.
  • To serve: We love to mash the eggs into the cottage cheese and veggies, and mix in the hummus!

    I absolutely LOVE, LOVE, LOVE this salad idea! I add whatever I have in the fridge at the time (pickled mushroooms, artichokes, red bell pepper) to change it up but this is an awesome lunch idea. So tasty and packed with yummy goodness. Made a large batch of the greek seasoning as well, so worth the effort!!
