What are strawberry cheesecake chimichangas?

Cheesecake is an indulgent dessert traditionally consisting of a cream cheese filling and a graham cracker crust. Baking the cream cheese filling makes for a thick and creamy texture — the perfect base for yummy strawberries! Once you have the cheesecake base, you can top it with anything from fruit to chocolate. It is super versatile, making it a perfect component of this combination recipe.

Chimichangas are essentially fried burritos. They are a staple in Tex-Mex and southwestern cuisine and are originally from Northwestern Mexico. Typically, chimichangas are savory and filled with meat and vegetables. They are a popular street food and can be deep-fried or pan-fried.

We mixed it up and made these air-fried chimichangas sweet by combining them with the rich flavors of cheesecake! The strawberry cheesecake filling is light and fluffy, and the tortilla makes for the perfect crust to balance out the creamy texture.

Why we love air fryer recipes

Traditionally, chimichangas are deep-fried in a pot of oil or pan-fried. This method is messy, hands-on, and time-consuming. That’s why we decided to make these dessert chimichangas in our air fryer. It really is so much better than deep frying!

When you use the air fryer, there is no need for oil. Because of that, you end up with less cleanup at the end and less waste! All you have to do is pop the strawberry cheesecake chimichangas in the air fryer basket and they will crisp up perfectly. It’s also healthier to make this dessert in the air fryer.

How to make strawberry cheesecake chimichangas

  1. Clean and prepare your strawberries. Remove the leaves and dice up your strawberries into tiny cubes.
  2. In a large bowl, add a block of cream cheese, sour cream, and sugar. Pour in the chopped berries and mix it all together.
  3. Assemble the chimichangas. Lay down a tortilla and scoop the strawberry cream cheese mixture into the middle. Fold in the sides and roll it into a burrito.
    • Tip: Spread a small amount of the cream cheese and sour cream mixture on the edge of the tortilla as a seal.
  4. Place the strawberry cheesecake burritos in the air fryer.
  5. Cook the chimichangas for 10-12 minutes at 350 degrees Fahrenheit.
  6. Remove them from the air fryer and dip them in melted butter. You can also brush the melted butter on them. Roll the chimichangas in cinnamon sugar.
  7. Serve warm.

How to store strawberry cheesecake chimichangas

These dessert chimichangas are so delicious it’s unlikely you will have leftovers. But if you do, this air fryer dessert recipe is simple to store and reheat!

Pop any leftovers in an airtight container and store it in the fridge. It will last for up to 3 days. Because of the cream, this recipe does not freeze very well.

You can eat them cold out of the fridge or reheat them! There are a couple of ways to reheat these treats. You can put them in the air fryer again or place them in the toaster oven or regular oven. If you’re in a hurry, you can even microwave these!

These chimichangas have a strawberry cream cheese filling. They are cooked in the air fryer and dusted with cinnamon sugar!

Ingredients  

  • 8 ounces cream cheese
  • ¼ cup sour cream
  • ¼ cup sugar
  • 1 cup chopped strawberries
  • 4 medium sized tortillas
  • 2 Tablespoons melted butter
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions 

  • In a large bowl, add cream cheese, sour cream, and sugar. Mix until combined. Add the chopped berries and fold together.
    8 ounces cream cheese, ¼ cup sugar, ¼ cup sour cream, 1 cup chopped strawberries
  • Lay down a tortilla, scoop the strawberry cream cheese mixture into the middle. Fold in the sides and roll it into a burrito.

  • Place the strawberry cheesecake burritos in air fryer.
  • Cook the chimichangas for 10-12 minutes at 350 degrees.
  • Remove them from the air fryer and brush them with melted butter.
    2 Tablespoons melted butter
  • Combined the sugar and cinnamon in a shallow plate.
    2 Tablespoons granulated sugar, 1/2 teaspoon ground cinnamon
  • Roll the chimichangas in cinnamon sugar.

    10/10. So damn good. I used smaller burritos and even ones that were healthy but oh my they were good. So creamy. So yummy. The cream cheese the strawberries and especially the cinnmanon sugar. Also incredibely easy and rly fast. Which makes it even better.
