Chia seeds, known for their superfood status, are soaked in a mix of almond milk and fresh strawberry puree, creating a pudding-like texture that’s not only rich but also incredibly refreshing. Ingredients You Need

How to Make Strawberry Chia Pudding

  1. Blend. Place the fresh strawberries in a blender and blend until you have a smooth puree.
  2. Mix wet ingredients. Add the almond milk, maple syrup, and vanilla extract to a large bowl and whisk together until completely combined. 
  3. Stir in the seeds. Sprinkle the chia seeds into the almond milk mixture, stirring them in until they’re fully incorporated.
  4. Add the strawberry puree. Using a rubber spatula, fold the strawberry puree into the chia mixture.
  5. Transfer to cups. Divide the chia and strawberry mixture evenly into serving cups or jars.
  6. Add the yogurt topping. Add a generous dollop of yogurt on top of each serving for a creamy finish.
  7. Cover and refrigerate. Cover your cups and pop them in the fridge for at least 4 hours or overnight, giving the chia seeds time to work their magic and create a thick, rich pudding.

Prepare this easy strawberry chia pudding recipe with just six ingredients for a nutritious make-ahead breakfast or snack!

Ingredients  

  • 16 ounces fresh strawberries plus more for topping
  • ½ cup unsweetened almond milk or milk of choice
  • 2 teaspoons maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • ¼ cup chia seeds
  • ½ cup plain Greek yogurt or vanilla yogurt

Instructions 

  • In a blender, add the fresh strawberries and blend until smooth.
    16 ounces fresh strawberries
  • In a bowl, combine the almond milk, maple syrup, and vanilla extract. Stir until well combined.
    ½ cup unsweetened almond milk, 2 teaspoons maple syrup, 1 teaspoon vanilla extract
  • Stir the chia seeds into the mixture until evenly distributed.
    ¼ cup chia seeds
  • Gently fold the strawberry puree into the almond milk mixture, making sure everything is well mixed.
  • Pour the mixture evenly into serving cups or jars.
  • Spoon the plain Greek yogurt (or vanilla yogurt) on top of each cup.
    ½ cup plain Greek yogurt or vanilla yogurt
  • Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and create a pudding-like texture.
  • Once set, top with extra fresh strawberries and enjoy!
