What is Strawberry Tiramisu?

Strawberry tiramisu is a fruity variation of the traditional Italian tiramisu. Instead of the usual coffee and cocoa, this version features layers of mascarpone cream and ladyfingers soaked in a sweet strawberry mixture. Fresh, juicy strawberries add a burst of flavor and a beautiful pop of color to each layer!

This dessert is all about combining the best of both worlds – the light, airy texture of tiramisu and the vibrant taste of strawberries. The mascarpone cream is rich and smooth, perfectly balancing the sweetness of the macerated strawberries. Each bite is an amazing blend of creamy, tangy, and sweet making it the perfect combination of flavors!

Ingredients You Need

  • Ladyfingers – These delicate sponge cookies soak up the strawberry mixture beautifully.
  • Mascarpone Cheese – This creamy cheese is the heart of tiramisu, giving it a rich, luxurious texture we can’t get enough of!
  • Cold Heavy Cream – Whipping cream adds lightness and volume to the mascarpone mixture, making it airy and delicious.
  • Vanilla Extract – A touch of vanilla brings out all the flavors and adds a lovely aroma to the cream.
  • Powdered Sugar – We love using powdered sugar for a silky smooth, sweet finish in the mascarpone mixture.
  • Lemon Zest – This adds a fresh, citrusy note that brightens up the entire dessert.
  • Milk – Mixing milk with strawberry preserves creates a sweet dipping mixture for the ladyfingers.
  • Strawberry Preserves – These preserves add a concentrated strawberry flavor to the dipping mixture.
  • Strawberries – Fresh strawberries are essential for their juicy sweetness and vibrant color.
  • Granulated Sugar – We use this to macerate the strawberries, drawing out their natural juices.
  • Lemon Juice – Lemon juice adds a bit of tartness to balance the sweetness of the strawberries.

How to Make Strawberry Tiramisu

  1. Prepare the Strawberries. Add the strawberries, granulated sugar, and lemon juice to a bowl and stir so that the strawberries are coated. Set aside to macerate. 
  2. Prepare the Tiramisu Filling. Add the mascarpone and powdered sugar to a large mixing bowl. Use an electric mixer on low to combine before adding heavy cream and vanilla extract. Once those are fully incorporated into the cheese mixture, slowly increase the speed of the mixer until the medium peaks form. 
  3. Prepare the Strawberry Dipping Mixture. Stir together the milk and strawberry preserves in a small bowl.
  4. Assemble. Dip individual ladyfingers into the milk and preserves mixture to coat them, then place them in the serving dish to form the first layer. Using a spoon or rubber spatula, spread a portion of the cheese mixture over top. Place macerated strawberries over top. Continue to layer until you have used all of the ladyfingers, cheese mixture, and strawberries. 
  5. Chill and Serve. Place a lid or plastic wrap over the tiramisu and refrigerate for the recommended time. Serve cold, garnished with strawberries or powdered sugar. 

Variations

  • Chocolate – Add a layer of chocolate ganache between the mascarpone and strawberries.
  • Berries – Swap out strawberries for a mix of your favorite berries, like blueberries and raspberries.
  • Citrus – Add a layer of lemon curd for a tangy surprise that pairs beautifully with the strawberries. Or, change up the zest and use lime or orange..
  • Nuts – Sprinkle chopped pistachios or almonds between the layers for added crunch and flavor.
  • Herbs – Infuse the mascarpone cream with a hint of basil or mint for a fun and refreshing twist.

Can I Store Leftovers?

We prefer to enjoy strawberry tiramisu when it is fresh since storing it for too long can cause the ladyfingers to become super soft. However, you can store it for a couple of days. 

Place leftovers in an airtight container in the fridge for up to 2 days. 

Avoid freezing — this dessert does not have the same texture when thawed.

Ingredients  

For the Tiramisu:

  • 12 ounces mascarpone cheese
  • 1/3 cup powdered sugar
  • 2 cups cold heavy cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon zest
  • 1/2 cup milk
  • 2 Tablespoons strawberry preserves
  • 7 ounces ladyfingers

For the Macerated Strawberries:

  • 16 ounces strawberries hulled and sliced
  • 2 Tablespoons granulated sugar
  • 3 teaspoons lemon juice

Instructions 

Prepare the Macerated Strawberries:

  • In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice.
    16 ounces strawberries, 2 Tablespoons granulated sugar, 3 teaspoons lemon juice
  • Stir to coat the strawberries evenly and let them sit for 1 hour to macerate.

Prepare the Tiramisu Filling:

  • In a large mixing bowl, combine the mascarpone cheese and powdered sugar. Mix on low speed until just combined.
    12 ounces mascarpone cheese, 1/3 cup powdered sugar
  • Add heavy cream, vanilla extract, and lemon zest. Continue mixing on low speed until well combined.
    2 cups cold heavy cream, 2 teaspoons vanilla extract, 2 teaspoons lemon zest
  • Gradually increase the speed every minute, ensuring the heavy cream whips up nicely and avoiding over-beating. Stop as soon as the mixture thickens to medium peaks to prevent separation.

Prepare the Strawberry Dipping Mixture:

  • In a small bowl, combine the milk and strawberry preserves, stirring until well blended.
    1/2 cup milk, 2 Tablespoons strawberry preserves

Assemble the Tiramisu:

  • Briefly dip each ladyfinger into the strawberry dipping mixture, making sure they are coated but not soggy.
    7 ounces ladyfingers
  • Arrange a layer of dipped ladyfingers in the bottom of your serving dish.
  • Spread half of the mascarpone mixture over the ladyfingers.
  • Add a layer of macerated strawberries on top of the mascarpone.
  • Repeat the layers with the remaining dipped ladyfingers, mascarpone mixture, and macerated strawberries.

Chill and Serve:

  • Cover the tiramisu and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
  • Before serving, you can garnish with extra strawberry slices or a dusting of powdered sugar if desired. Enjoy!
