How to Make Tomato Basil Chicken with Burrata

  • Marinate. Add all of the ingredients for the chicken marinade into a large bowl. Then add the chicken and coat it with the marinade. 
  • Cook. Place the chicken on the preheated grill and cook on both sides until the chicken reaches 165 degrees Fahrenheit. 
  • Prep the Topping. Add the tomatoes, salt, pepper, lemon juice, olive oil, and basil to a medium bowl and stir to combine.
  • Assemble. After the cooked chicken has rested briefly, top it with burrata cheese, tomato basil topping, and balsamic glaze and serve immediately.

Can I Store Leftovers? 

You can definitely store leftovers of this dish! However, you might want to store the components separately, if possible so that you can easily reheat the chicken. 

Store leftovers in the fridge for 3-4 days in an airtight container. 

While we don’t recommend freezing the burrata, the chicken and the topping can both be frozen in freezer-safe containers for up to 3 months.

Ingredients  

For the Chicken

  • 4 boneless skinless chicken breasts pounded to even thickness (1 inch or less)
  • 1/4 cup olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 balls burrata cheese

Tomato Basil Topping

  • 1 cup grape tomatoes sliced in half
  • Salt and pepper to taste
  • 2 teaspoons fresh lemon juice
  • 2 Tablespoons olive oil
  • 2 Tablespoons finely chopped fresh basil
  • Balsamic glaze for drizzling

Instructions 

  • In a large bowl, combine the chicken, olive oil, Italian seasoning, garlic powder, salt, and black pepper. Stir to coat the chicken evenly with the seasonings.

  • Grill the chicken over medium-high heat for 6-8 minutes on each side, or until cooked through.

  • While the chicken is cooking, prepare the tomato basil topping. In a medium bowl, combine the tomatoes, salt, pepper, lemon juice, olive oil and basil. Stir well.

  • Once the chicken is cooked through, top each chicken breast with burrata cheese

    Delicious and so fresh, the flavors are so simple yet bright, perfect for a summer dinner! I could not find burrata so I replaced with mozzarella. I also marinated the chicken for a few hours before grilling. This will go into the rotation!
