Before you begin, preheat your oven, and lightly grease a muffin tin or doughnut panswith cooking spray. Make sure to get all the edges!
Whisk the flour, baking powder, salt, cinnamon, and nutmeg together in a large bowl.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar until light and fluffy. Then, add the eggs one at a time, mixing well after each addition. Finally, beat in the vanilla extract.
Working slowly with the mixer on the lowest setting, add the dry ingredients to the bowl of wet ingredients, and mix just until no streaks remain.
With the mixer still running, slowly add in the apple cider in a steady stream until the batter is uniform. Spoon the batter into the greased pan, filling each cavity roughly ⅔ of the way full.
