In a large skillet over high heat, cook the ground beef. Reduce to medium heat and add chopped onions and peppers. Add salt, pepper, paprika, oregano, garlic, and Worcestershire sauce. Remove from heat and stir in mayonnaise.
Butter the bottom of a baking dish. Put the bottom half of the buns in the dish. Top with pepper jack cheese slices, followed by the beef mixture. Sprinkle shredded Colby Jack cheese on top, then cover with the top half of the buns.
Cover the dish with foil. Bake for 15-20 minutes, or until the cheese is melted and the buns are golden brown. Serve hot and enjoy!
