Crockpot Lasagna Soup has all the savory, cheesy flavor of classic lasagna with half the work! Serve it on its own or with your favorite sides and appetizers for a family-friendly comfort food meal.
Heat a large skillet over medium-high heat, and brown the beef, breaking it into pieces until it’s no longer pink. Drain the excess fat.
Add the onion to the skillet with the beef, and sauté until translucent. Stir in the minced garlic, and cook just until fragrant. Season with salt and pepper.
Transfer the beef mixture to the crockpot, and add the remaining salt, black pepper, broth, marinara sauce, crushed tomatoes, Italian seasoning, and cheese rind.
Stir to combine. Then, add the lasagna noodles, stirring to distribute them evenly. Cover the crockpot, and cook until the noodles are soft and the liquid thickens.
Combine the cheese. In a separate bowl, combine the ricotta, Mozzarella, parmesan, and dried oregano.
Ladle the soup into bowls, add a generous dollop of the cheese mixture on top, garnish with basil leaves, and enjoy warm!
