Fruit Salad  Lettuce Cups

We’re sharing a recipe for Fruit Salad Lettuce Cups. This completely gluten-free recipe can also be made vegan and dairy-free with the simplest of steps and substitutions. We’re obsessed with how light, healthy, and delicious it is!

strawberries mango English cucumber green apple juice of 1/2 an orange juice of 1/2 a lemon honey lettuce cups  goat cheese toasted walnuts

Dice strawberries and peel and dice cucumbers and apples.

SLICE

Slice mango in thirds, then cut each slice on a crosshatch. In a large mixing bowl squeeze in orange and lemon.

DRIZZLE

Drizzle in the honey and whisk until combined. Add diced fruits and cucumbers, mixing thoroughly.

GARNISH

Fill the lettuce cups with the fruit salad. Garnish with goat cheese and walnuts/pecans, and enjoy!
