Say goodbye to bland, boring chicken for good! These Garlic Parmesan Chicken Drumsticks with Potatoes turn out flavorful and juicy every single time. Simply marinate the chicken and potatoes, bake them in the oven, and dinner is served!
Add the oil, lemon juice, parmesan, and seasonings to a bowl, and whisk until they’re well combined.
Pour half of the marinade into a sealable bag. Add the potatoes, seal, and toss to coat them with the liquid. Set aside.
In a second bag, pour the remaining marinade. Add the chicken, and toss to coat. Set aside to marinate at room temperature.
Arrange the potatoes in a single layer on one side of a greased baking sheet. Arrange the chicken drumsticks on the other side. Cover the baking dish with aluminum foil, and transfer it to a preheated oven.
Bake until the potatoes are tender and the chicken has reached an internal temperature of 165 degrees Fahrenheit.
Remove the foil, and set the oven to broil. Allow the chicken and potatoes to cook under the broiler just until they turn golden brown. Be careful not to burn!
Brush any remaining marinade (not used on the raw chicken) on top, and let the chicken rest for a few minutes.
Garnish your baked chicken drumsticks and potatoes with fresh herbs, and enjoy warm!
