Add the olive oil, lemon juice, and seasonings to a large bowl and whisk to completely combine. Place cubes of chicken in the marinade, and coat each piece. Cover the top of the bowl and refrigerate.
Place wooden skewers in water for at least half an hour (metal skewers do not need to be soaked). Press the cubes of chicken onto the skewers.
Set the chicken on a grill pan or grill grates and cook on each side until the chicken reaches the desired internal temperature, at least 165F.
Pull the chicken off of the skewers and allow them to rest briefly before serving.
