Ingredients You Need

  • Broccoli florets – These vibrant green beauties are the real MVPs, giving our fritters a hearty, veggie-packed base for all of the cheesy goodness.
  • Shredded cheddar cheese – The tangy flavor of cheddar brings a little zing to the party and makes every bite irresistibly cheesy.
  • Shredded mozzarella cheese – Picture melty, gooey goodness—that’s what mozzarella brings to the table!
  • All-purpose flour – Think of flour as the glue that holds everything together. It’s the secret ingredient for achieving that perfect crispy exterior while keeping our fritters nice and sturdy.
  • Beaten large eggs – These eggs are the unsung heroes of our fritters, binding everything together and giving our fritters the perfect texture.
  • Dried oregano – Oregano brings that Mediterranean flair, adding a pop of flavor that’ll have you coming back for seconds.
  • Paprika – Paprika adds a touch of warmth and depth to our fritters, giving them that extra flavorful oomph.
  • Salt – A pinch of salt is like the conductor of flavor—it brings out the best in all of the ingredients, ensuring our fritters are perfectly seasoned and downright delicious.
  • Black pepper – Spice things up a bit! Black pepper adds a subtle heat and a hint of peppery goodness.

The Easy Way to Make Broccoli Fritters That Are Super Cheesy

  1. Prepare the broccoli. Place florets in a steamer for several minutes, then drain and dice into small pieces.
  2. Combine with other ingredients. Add the broccoli to a large mixing bowl with the remaining ingredients and toss until well combined.
  3. Make the fritters. Add the mixture to a heated and prepared skillet in spoonfuls. Flatten the mixture to form a patty.
  4. Fry. Cook until crispy and browned on each side before transferring to a paper towel-lined plate. Repeat with the remaining mixture.
  5. Serve. Place on a serving plate alongside your favorite dips

Variations

  • Spiciness – Add diced jalapeños or crushed red pepper flakes to the batter for a fiery twist. Top with a dollop of sriracha mayo for extra heat!
  • Italian-Inspired – Swap the oregano for Italian seasoning and mix in some diced sun-dried tomatoes and chopped fresh basil. Serve with marinara sauce for dipping.
  • Tex-Mex Twist – Add chopped green chilies, corn kernels, and a dash of cumin to the batter. Serve with avocado crema and salsa for a south-of-the-border flair.
  • Mushrooms – Sauté chopped mushrooms with garlic and thyme until golden brown, then mix into the batter. Top with a sprinkle of parmesan cheese before serving.
  • Greek-Inspired – Swap the cheddar and mozzarella for crumbled feta cheese and add chopped spinach and diced roasted red peppers to the batter. Serve with tzatziki sauce for dipping.
  • Buffalo Flavor – Mix in buffalo sauce and crumbled blue cheese to the batter for a tangy, spicy kick. Serve with ranch or blue cheese dressing for dipping.

Can I Store Leftovers?

We think these are best snacked on when fresh, but if you need to store them, you can!

To refrigerate, just place these in an airtight container for 3-4 days.

Freeze the fritters for up to 3 months in a freezer-safe container. You can also store them in resealable freezer bags — just separate them with parchment paper
